Here is an easy one, Mashed Pumpkin with White Fish.
Ingredients for 1 portion:
1/4 of a medium-size pumpkin
1 small piece of fish (cod or threadfin or other white fish), season with a bit of sesame oil & soya sauce
1 teaspoon of Parmesan cheese
A dash of dried herb (optional)
Directions:
1) Steam the fish for 10 mins and flake it up, remove any bones from the fish.
2) Steam or boil the pumpkin until it is soft, then mash it up with a fork. Add a tablespoon of hot water to dilute it.
3) Mix the fish and pumpkin together, add in the Parmesan cheese and herb.
4) Serve immediately.
This one is a 'one stone kills two bird' type of dish. First you prepare the Old Melon with Pork Ribs Soup for the family and then you use 2-3 cups of the soup for cooking baby's Porky Porridge.
Ingredients for a big bowl of soup, serving 3-4 person:
300g of pork prime ribs
1 old melon cut into big pieces and remove the seeds
2 carrots chopped into big pieces
A handful of wolfberries
1 corn cut into 3 pieces
Directions for Old Melon with Pork Ribs Soup:
1) Boil the ribs in some hot water for 10 min, to get rid of the smell then drain them.
2) In another pot, boil 8 cups of water. When the water boils, put in all the ingredient, simmer in low heat for a good 40 mins.
3) Scoop out 2-3 cups of soup with 2 or 3 pieces of carrots & 1 rib for making porridge, add salt to taste for the remaining soup. Serve the soup hot.
Directions for Porky Porridge:
1)Wash and drain 1/3 cup of rice.
2)Add in the soup you kept aside, together with the carrots and rib. You might want to freeze it for a short moment to remove the oil from the soup before cooking.
3)Heat until boiling and then turn down to low heat, simmer for 20 mins.
4)Shed meat from the rib and chop the carrots into chunks before serving.
