Yucks! Veg & fish, you might say, but Mommy cooked them until they virtually disappeared, so even the fish or veg hating babies would be fooled.
Ingredients for 2 adults and 1 baby:
1 cup of rice
6 cups of water
2 carrots, finely grated
5 leaves of cabbage, finely chopped
1 small piece of fish (cod/salmon or any firmer flesh fish), seasoned with a dash of sesame oil and soy sauce
1 egg
Directions:
1) Put the rice and the water in a pot and bring to boil. Then turn down to medium heat to simmer for 20mins or until the rice becomes very soft. Stir occasionally.
2) Put the grated carrots and chopped cabbage into the congee, stir well, covered the pot and reduce to low heat to simmer for another 20 mins. Stir occasionally.
3) Put the fish and the egg into the congee, stir for 2 min to break up the fish and egg until they become fine and evenly spread out.
4) Serve warm. *Optional- Adults can add a bit of salt and fried shallots to the congee for more favors.
I call it my "Power Congee"! Yum! Yum!
